It’ll work some of the time, but to get more consistent results you want to focus more on the below (which is shown in the video): - Smoke until you are happy with the colour and once your rub has settled into the meat. You can check this by touching your ribs and the rub shouldn’t come off on your finger. - Wrap until they are tender. I usually check for tenderness after 1 hour wrapped, probing between the bon
